Tasty Tuesday: The perfect pie from the heart

COLUMBIA SC (WOLO) – The secret to a great pizza, according to Persona Pizzeria Operations Manager Robert Leavitt, is in the dough…more specifically, the flour.  Leavitt sites the use of Persona Pizza’s use of 00 Caputo flour, which is imported from Italy.  The locally owned Persona Pizza on Main Street in Columbia also used a wood fire oven, burning at over 800 degrees, which cooks a pie in about 90 seconds.  “At home however,” says Leavitt, “you should set your oven at 450 and cook for 15 minutes.”

Persona Pizza shared some secrets to making a great pizza, as well as a special Valentine’s Day pie with Tyler Ryan on GMC’s Tasty Tuesday.  Persona Assistant Manager Charlotte Moes adds that another tip to creating a tasty and unique pizza is using spaghetti or other red sauce rather than traditional pizza sauce.

Another insider tip for great pizza is fresh mozzarella.  Leavitt says to buy a block and shred it at home, as it will be fresher, and not contain extra preservitives.

Leavitt provided a shopping list if you want to try your hand at the heart-felt pizza they demonstrated on the show:

  • Flour
  • Sea Salt
  • Yeast
  • Sauce
  • Mozzarella cheese
  • Pepperoni
