Tasty Tuesday: Making and Breaking Bread
Tyler Ryan learns the secrets of making yummy bread from Our Daily Bread
COLUMBIA SC (WOLO) – The Columbia Food and Wine Festival is a week away, as as we get closer and closer, we are getting sneak peeks at some of the over 100 restaurants and breweries that are taking part in the multi-based event. One of the freshmen participants is Our Daily Bread.
Tracey Katsikis and her husband started the bread baking coming a little over two years ago, and have since turned a passion for bread into a healthy small business.
Katsikis shared her recipe for her super tasty ciabatta bread:
Recipe yields 3 loaves of ciabatta bread
Ingredients:
499 g bread flour
16 g salt
389 g water
5 g instant yeast
Equipment needed:
Stand mixer with attachments.
Instructions:
Add all dry ingredients to a bowl and whisk together (including instant yeast – must be instant).
Add the water to the bowl of the stand mixer fitted with a paddle attachment. Add all dry
ingredients and mix on low speed for approx 2 minutes. Scrape down the sides and turn up to
medium/high speed for 5 minutes.
At this point the dough should form a ball around the paddle. Switch to the dough hook for 11
minutes on medium/high speed. Dough is ready when it looks shiny and smooth.
Spray the bottom and sides of a large container. (The dough will get pretty big and you don’t
want it to stick)
Pour the dough into the container, wet your hands then do an envelope stretch — fold taking the
part of dough edge that is furthest away from you, pull it upwards and towards you, then take
the closest part of the dough edge, pull up and stretch it away from you. Turn the container and
repeat.
Cover and let sit for 2 1/2 hours.
Heavily flour a surface as well as the baking pans. (Recommend use of parchment paper.)
Pour the dough onto the floured surface and shape into a large rectangle approx 13”x 12” then
cut the dough into three even loaves placing them onto floured pans.
Lightly dimple the loaves randomly then sprinkle with flour and let them rise for about an hour.
– At this point before the bread sits to rise is when you can get creative and add some
toppings. Chef tip — drizzle some extra virgin olive oil and get creative!
Preheat oven to 425 at least 30min into the final rise. Also place a metal pan with water at the
bottom of the oven for some moisture.
Drop temp to 400 once the bread goes in. Bake 10-13 min or until golden brown.
Pro tips:
Some of my favorite combinations are rosemary and sea salt, jalapeños with Monterrey
cheddar, zatar seasoning with Kalamata olives and feta cheese, and of course bacon and
cheddar always make things better!!
