Manmade Gourmet’s Love It or Chuck It: Keto Supreme Pizza Roll-Ups

LEXINGNTON SC (WOLO) – Everyone loves pizza, but if you are trying to watch carbs, or trying to live keto, it can be hard to enjoy a good pie.  Tyler and Vaughan found a hack!

Per usual, we tried to stick, as best we could, to the recipe that we found…

Here is what you need:

  • 8 slices mozzarella cheese
  • 1 tablespoon olive oil
  • 1/4 cup red bell pepper, finely sliced
  • 1/4 cup mushrooms, sliced
  • 12 slices turkey pepperoni or beef pepperoni, chopped
  • 1 tablespoon black olives, sliced
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon garlic powder
  • 1 tablespoon fresh parsley, chopped
  • Low-carb marinara sauce, for dipping

How to make it: 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Heat olive oil in a skillet over medium heat. Add mushrooms and bell peppers and sauté for 3–4 minutes until tender. Stir in the pepperoni, olives, garlic powder, and Italian seasoning. Cook for 1 minute more.
  • Arrange the mozzarella slices on the prepared baking sheet, leaving space between each slice.
  • Spoon a small amount of the vegetable and pepperoni mixture onto the center of each cheese slice. Sprinkle with fresh parsley.
  • Bake for 6–8 minutes, or until the cheese has melted and the edges are lightly golden.
  • Remove from the oven and let cool for about 2 minutes, until the cheese is firm enough to handle.
  • Carefully roll each slice into a tight roll-up.
  • Serve warm with low-carb marinara sauce for dipping.
