He joined The Manmade Gourmet, Tyler Ryan for a Tasty Tuesday…and tasty doesn’t start to describe it.
Here are his recipes for smoked chicken salad and burnt ends:
Smoked chicken salad
- Season chicken breast with all seasonings, make sure salt is first. Let rest with seasoning about 15 to 20 min
- Set smoker or cooking apparatus to 250 degrees, put chicken on (this should be about 90 min cook time)
- Remove chicken when internal temperature is 155 and let rest for 15 minutes to rise in temp
- Slice chicken into pieces and put in blender on pulse setting
- Add as much celery and dukes as you would like and mix together until all incorporated
- Put in refrigerator for at least 30 min before serving
- Season chuck roast with black pepper first then season salt and granulated garlic
- Set smoker to 275 degrees and cook chuck roast for about 2 hours until bark develops. Internal temperature will be around 165 to 175
- Remove chuck roast and cut into 3/4 in cubes
- Place cubed meat into at half pan (9×13)
- Add butter, BBQ seasoning, 1/4 cup of Texas Pete, 3/4 cup of BBQ sauce, 16oz of beef stock.
- Place back on smoker or in oven at 325 degrees for about another 2 hours, stirring every 30 minutes.
- Remove when desired bark and beef stock has reduced by at least half. The liquid will start to thicken a bit, that’s when it’s ready!
